WHATTTT??? It's been awhile, and trust there will be a blog post as to all that I have been up to soon. Because that one will take me a while to write, I wanted to gift you a new recipe while you wait!
I whipped this up for a summer potluck contest, so I will share the dressing I made because it was delicious and refreshing!
Creamy Verde Dressing
Yields 2 cups
1/2 cup favorite pesto
1 avocado
1 cup plain yogurt
1 cup cilantro
squeeze of half to a whole lime (or 1 tbsp. vinegar)
Blend together. That's it!
In the pasta salad pictured, there's 1 lb. pasta, feta cheese, chopped spinach, crisp broccoli florets, red pepper flakes, and shredded chicken! Simple! Mix and match what you like! I wanted to stick with green- clearly. :-)
