Absolutely. 1000% yes. Pineapples are sweet. Coconut and sugar cookie crust add texture. Lime cheesecake swirl cuts through the richness and offers that "envie" touch of making you crave more.

When my dad spoke his acceptance through sounds of approval, and then proceeded to grab 3 from the "throw away" background bars, I knew these were the truth!
Envie Recipe
1-17.5 oz. package sugar cookie mix
1 ½ sticks unsalted butter, softened to room temperature
1 ¼ cup shredded sweetened coconut
2 limes
½ tsp. salt
12 oz. cream cheese
2 Egg
½ cup sugar
1- 18 oz. can Lucky Leaf Premium Pineapple Fruit & Topping Filling (link to enjoy below)
1. ***Preheat the oven to 350F degrees. Zest the lime. Set aside. Mix the sugar cookie mix, butter, ¾ cup coconut, lime zest, and ¼ tsp. salt together with a wooden spoon until completely smooth and comes together as a dough. Press this on the bottom of a 9x13” baking pan. Bake for 20 minutes. Let cool for 5 minutes.
2. Meanwhile, with a hand mixer, beat together the cream cheese, eggs, sugar, the juice of 1 ½ lime, and remaining ¼ tsp. salt.
3. Increase the oven to 375F degrees. Drizzle half of the cream cheese filling onto the cooled crust. Then, follow with the pineapple filling. Place heaping tablespoons of the cream cheese mix over the filling. Swirl the batter with the back of a spoon or butter knife.
4. Bake covered for 1 hour and 20 minutes. Remove from the oven. Let cool completely. Refrigerate for another 2 hours or overnight. Slice into 16 squares medium sized bars or 32 mini bars. Top with remaining lime zest.
** Split the bars between two half pans, and you can avoid the step of preheating! Make the bars in this amazing convection oven!

Note: Run hot water over the knife for easier slicing. Wipe the knife regularly to keep the lines clean.
